How to Cook Potatoes on the Grill in Foil

Use two 15-inch pieces of aluminum foil (doubled-up) for every serving of potatoes. I like using nonstick foil, but if you do not have any, be certain to use enough olive oil to stop the potatoes from sticking.

Splash olive oil into the center of the foil. Carefully slice a few onions and place them on the top of the olive oil.

Cut russet potatoes in 1/4-inch pieces and arrange them on the top of the sausages. I use approximately half of one big russet potato in all of them and do not bother peeling it. Try for equal slices to ensure that they cook equally.

  • 3 cups red potatoes cubed

  • Dice potatoes and place in a medium sized bowl. Add chopped pepper and onions.
  • Mix together the boullion, Dijon mustard, garlic salt and water.
  • Toss half of the Dijon glaze with the potatoes and vegetables.
  • Take a large piece of aluminum foil. Pour vegetables in the center with sliced sausage. Turn up the sides to make a packet. Leave an opening at the top so the steam can release.
  • Add potato and bacon foil packets to a medium-high grill. Cook for 15 minutes and then slowly add the rest of the dijon glaze.
  • Cook for 15 minutes more or until potatoes are golden brown.
