  • 4 tablespoons butter plus softened butter, for buttering the tortillas
  • 16 oz mushrooms One 16-ounce box white sliced
  • 1 lb chicken precooked and sliced into strips

  • Mix all ingredients of the spice mix in a bowl. Store any leftovers in a plastic container with a lid for later.
  • Build a medium size campfire with a large metal grate to hold the skillet and foil packets.
  • In a pan, combine the butter, mushrooms, onions, bell peppers, paprika, and salt and pepper. Cook while stirring til caramelized, about 15 to 20 minutes.
  • To make the quesadillas, apply a small amount of melted butter on the outside of each tortilla and set it buttered-side down on a single heavy-duty foil square. Add the chicken and veggie mixture to each piece of foil
  • Top with a mixture of Cheddar, Monterey Jack, and Mozzarella, followed by a few jalapenos. Fold in half and seal in separate foil packets. Cook for 3 to 5 minutes over a hot campfire grill, or until heated through and the cheese has melted.
