Ingredients
  

  • 1 lb venison boneless steak, ground
  • 2 tbs olive oil
  • 1 tsp brown sugar
  • 1 tsp black pepper ground
  • 1 tsp oregano ground
  • 1 tsp paprika
  • 1/2 lb pork sausage ground
  • 1 onion chopped
  • 2 cloves garlic minced
  • 6 oz tomato paste
  • 8 ox tomato sauce
  • hot pepper sauce to taste
  • salt and ground black pepper to taste
  • 15 oz can kidney beans drained
  • 10 oz tomatoes diced can with green chiles
  • 3 tbsp chili powder or to taste
  • 1 cup cheddar shredded

Instructions
 

  • Place the ground venison and pork in a large skillet. Brown lightly, do not cook through. The crockpot will take care of that. Break up the chunks with a wooden spoon. You want the meat as fine as possible in the chili. You want the meat to show a hint of pink.
  • Drain the grease then add in the minced onion and garlic for a few minutes, about 3. Drain and mix in the rest of the spices including the salt, paprika, oregano, brown sugar and pepper. Cook for a couple of minutes then add the hot pepper sauce. Let simmer for 5 minutes.
  • Add the beans, tomato paste and sauce to a slow cooker. dice the can of tomatoes and green chilles into 1/2 inch chunks. Stir in the meat and spice mixture. Cover and cook for 8 hours on low or 5 hours on high. Sprinkle each servings with cheddar cheese and serve.
