  • 1 cup Red Wine
  • 1 large onion sliced
  • 1 tbsp cooking oil
  • 4 lb venison roast
  • 1 1/2 tsp. salt

  • 2 tsp thyme divided dried

  • 2 tsp rosemary divided dried
  • 5 cloves garlic cloves minced and divided
  • 1 tbsp red wine vinegar
  • 1 tbsp Worcestershire Sauce
  • 5 carrots peeled and cut into halves
  • 1 green bell pepper diced
  • 1 celery rib diced
  • 2 lbs potatoes gold left whole, not peeled
  • 1/4 cup cornstarch

  • Distribute the onion slices evenly on the bottom of the slow cooker.
  • In a large skillet, combine the melted ghee with the venison roast or frying oil. Season the roast with salt and pepper and sear it over medium-high heat until golden brown, turning once to ensure no redness remains on the sides. Every side should have at least three minutes.
  • Put the roast on top of the onions once you've added them to the slow cooker. Stir in the pot roast spice, beef stock, red wine vinegar, red wine, and Worcestershire sauce until the mixture reaches about three quarters of the roast's height.
  • Place ¾ of the thyme and oregano on top of the roast after coating it with the tomato paste.
  • Before topping the roast with potatoes, bell pepper, celery, carrots, and the remaining oregano, thyme, and garlic, season it with salt and pepper. After the vegetables and roast have softened, simmer for another 9 to 10 hours on low heat. After the carrots and potatoes are cooked, remove them from the oven and cut them into whatever shape you choose.
  • Add the cornstarch to a sauce pan along with any leftover liquid from the slow cooker. Raise the gravy to a boil, stirring continuously. To taste, add more salt and pepper.
