  • 6 lbs venison ground
  • 2 lbs pork ground
  • ¼ cup sugar-based curing mixture
  • ¼ cup brown sugar packed
  • 3 tablespoons sage dried
  • 3 teaspoons thyme dried
  • 3 tablespoons fennel seed
  • 1 tablespoon red pepper flakes crushed
  • 1 tablespoon black pepper fresh-ground
  • 1 cup lard
