I wanted to make this chicken fried venison cube steak recipe using venison from my husbands deer. My hubby adored it. Serve with mashed potatoes and gravy. I made white gravy, but country gravy can be used for a more mild taste.

For the chicken fried deer cube steak (also known as venison loin), I chose venison backstrap, but the top round and bottom round would also work well. I prefer to pan-fry my cutlets “country fried style” in a medium-sized cast iron skillet, although a deep fryer would also suffice.

  • In a medium-sized dish combine the egg and buttermilk. Mix until well combined.
  • In another container, combine all of the dry breading components and stir completely.
  • Carefully salt and pepper the venison steaks on each side. Add the dry breading mixture evenly on the two sides of the steaks. Save the leftover breading for later.
  • Dredge one steak at a time in the buttermilk mixture. Then, cover the steaks again on each side with the leftover dry breading mix.
  • Add enough frying oil to a big cast iron pan to cover about 2 inches.
  • Working in batches, cook the steaks until golden brown on both sides, gently turning as required. Season the steaks with salt right after they’ve been removed from the frying oil.

  • In a medium-sized bowl add the egg and buttermilk. Whisk thoroughly to combine.
  • In a separate bowl, add all of the dry breading ingredients and mix until thoroughly combined.
  • Lightly season the venison steaks on both sides with salt and pepper. enerously apply the dry breading mixture to both sides of the steaks. Reserve the remaining breading for later.
  • One at a time, dip the steaks into the buttermilk mixture. Then coat the steaks once again on both sides with the remaining dry breading mixture.
  • Add enough cooking oil to a large cast iron skillet to a level of around 2 inches.
  • Working in batches, fry the steaks until they are a nice golden brown on each side, carefully flipping as needed. Immediately after removing the steaks from the cooking oil, season them lightly with salt.
