What Kind of Marinade?

You can use your favorite but we recommend our Espresso signature marinade.

If you do not have marinade or a salad dressing on hand, apply olive oil, sea salt or kosher salt, black pepper, one lemon’s juice, dried or fresh dill, onion powder a bit of smokked paparika.

You may also prepare your own marinade. Try my espresso recipe below, which also works well with about any meat.

You could combine this with BBQ sauce to make a baked barbecue salmon. To keep the veggies and fish wet in a rich BBQ sauce, I would add water or olive oil.

If you don’t like BBQ veggies, create separate packages of vegetables.

You may add peppers, cauliflower, mushrooms, onions, broccoli, carrots, summer squash, zucchini, and tomatoes.

To make this salmon grilled in foil recipe even simpler, bring a box or two of vegetables that are frozen with you on your camping trip. There is no need to cut anything because it has already been done for you, which saves prep time.

When I go camping, I prefer to carry frozen items to keep them cold in the cooler. Frozen foods often defrost in a day or two.

What Kind of Foil?

For your campfire salmon foil packets grill recipe, use strong aluminum foil. If you don’t have any, fold over a conventional sheet of foil to create a second layer of foil. Then add two double layers.

You may also prepare single salmon fillets. Prepare separate salmon foil packets with a smaller quantity of fish, vegetables, and spice (one-person servings). Decrease the cooking time to 10-15 minutes.

Build your campfire and have a grate to place the packets on

Put one salmon piece on a layer of aluminum foil. Sprinkle with salt and black pepper, then top with one slice of lemon dill compound butter and a sprig of fresh dill. Wrap tightly so there are no openings. Continue with the remainder of the fillets.

Place the packets on a preheated grill, skin side down. Cook for about 12 minutes, until it’s ready .
Once prepared, take the packets from the grill and give them time to cool slightly before eating.
Serve with a lemon slice (optional) and an accompaniment of your choice.

Lemon Dill Compound Butter. If you have no desire to prepare it, simply sprinkle each fillet with minced fresh dill, lemon zest, lemon slice, and a tablespoon of butter.
The time needed to cook may vary based on the heat of your grill and the size of the fillets.

The total amount of seasonings you use will be determined by your personal preference. I like to season them thoroughly, and I usually use unsalted butter.
The minimum internal temperature should be

145°F/65°C. Check the temperature in the thickest portion of the fish.

Ingredients
  

Marinade

  • 2 cups espresso or 2 cups strong coffee
  • 1/4 cup lemon juice
  • 1/4 cup molasses
  • 1/2 tsp red pepper flakes
  • 3 tbsp kosher salt
  • 2 tbsp balsamic vinegar

Salmon

  • 4 salmon fillets about 1.5 pounds/680 grams in total, see note 1

Marinade

  • Make espresso or coffee and let cool. Mix all ingredients together until well blended.
  • Wash meat off and poke holes in it. Pour marinade in freezer bag and add meat. Let as much air out as you can and seal the bag. Massage the marinade into the meat.
  • Allow your salmon to soak up the espresso marinade for about 1 hours. Dont overdo it.

Salmon

  • Build your campfire and have a grate to place the packets on. Create the mariande and allow the salmon to marinate for 1 hour.
  • Place one salmon slice on a sheet of aluminum foil. Sprinkle with salt and black pepper, then garnish with a slice of lemon dill compound butter and a sprig of fresh dill. Wrap securely, leaving no holes. Continue with the remaining fillets. (Optional: Add fresh or frozen vegetables.)
  • Place the packages on a hot grill, skin side down. Cook for about 12 minutes, or until ready.
