Ingredients
  

Ribs

  • 6 lbs pork ribs pork baby back ribs trimmed and peeled

Sweet and Smoky Rub

  • 1/4 cup sugar light brown
  • 1/2 tablespoon salt kosher
  • 1/2 tablespoon celery salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon chipotle powder
  • 1 teaspoon ancho chile powder
  • 1/2 teaspoon fine mesh black pepper
  • 1/4 teaspoon mustard powder

BBQ Sauce

  • ½ cup beer
  • ¼ cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tbsp maple syrup
  • 1 tbsp black pepper
  • 1 tbsp sea salt
  • 2 tsp Tabasco sauce

Rub

  • Mix the ingredients together. Make sure to remove any clumps in the brown sugar, if any.

Ribs

  • Fire up your smoker to 225F.

  • To get the ribs ready, peel off the back layer of silver skin and cut off any extra meat. Use oil to coat and brown sugar, garlic powder, black pepper, sea salt, and onion powder to season. Put the ribs on the grill once it's even at 225F and let them cook for 3 hours.

  • After three hours of cooking, put the ribs on a sheet of tin foil and spread out three tablespoons of butter, one tablespoon of brown sugar, and one tablespoon of maple syrup. Spread butter and sugar on a plate, then add ribs on top of that. Repeat with more butter, sugar, and maple syrup. Do this again for all of the ribs. After covering both sides of the ribs with butter, sugar, and syrup, pour 1 tablespoon of Guinness Draught over them and cover them with tin foil to keep the beer from leaking. Re-smoke the ribs for two more hours at 225F.

  • After two more hours of cooking, take the ribs out of the tin foil and throw it away. Carefully put the ribs back on the grill and cover them in Maple Guinness BBQ Sauce. Let it smoke for one more hour.

  • Put the smoked meats in a cooler for an hour to rest. Turn the ribs over so the bone side is facing up and cut them. Have a pint of Guinness Draught and enjoy it!

BBQ Sauce

  • Warm up a cast iron pan over fire for the Maple Guinness BBQ Sauce about an hour before the ribs are ready. Pour half of the Guinness Draught into the pan and let it cook down. Add the rest of the BBQ sauce ingredients and cook over a fire until the sauce gets thick. Once done, put it aside.
