Ingredients
  

Chimichurri Sauce

  • 1/2 cup minced yellow onion
  • 1/2 cup chopped fresh flat-leaf parsley leaves
  • 1 tablespoon chopped fresh oregano
  • 1 teaspoon finely grated or minced garlic
  • 1-1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup extra-virgin olive oil
  • 1/2 cup red wine vinegar

Smoked Sausage

  • 8 quality Italian sausages
  • 2 tablespoon olive oil
  • 1 red onion sliced
  • 8 hot dog buns cut into 8 pieces (or 4 pieces for a full portion)
  • deli mustard about 1 tablespoon per sandwich

Sausage

  • Smoke sausage on the smoker, grill or over the fire for about one hour (or until the internal temperature reaches 165 degrees). Let sit for about 10 minutes and cut in half.
  • Cook onions on a skillet over medium high heat cook the peppers and onions for about 8-10 minutes or until soft and slightly caramelized.
  • Cut down the center to make a bun-like shape, but take care not to cut all the way through.
  • Layer each sandwich some mustard, onion , and top with the sausage. Repeat with each slice of bun for eight servings.

Chimichurri

  • To make the chimichurri, put the garlic, onion, parsley, oregano, salt, black pepper, and red pepper in a big bowl or jar. Combined the vinegar and oil well. Cover and store for a few days. Use before the herbs turn brown.
