Sausage
Smoke sausage on the smoker, grill or over the fire for about one hour (or until the internal temperature reaches 165 degrees). Let sit for about 10 minutes and cut in half.
Cook onions on a skillet over medium high heat cook the peppers and onions for about 8-10 minutes or until soft and slightly caramelized.
Cut down the center to make a bun-like shape, but take care not to cut all the way through.
Layer each sandwich some mustard, onion , and top with the sausage. Repeat with each slice of bun for eight servings.
Chimichurri
To make the chimichurri, put the garlic, onion, parsley, oregano, salt, black pepper, and red pepper in a big bowl or jar. Combined the vinegar and oil well. Cover and store for a few days. Use before the herbs turn brown.
