Grilled kabobs are a great make ahead camping meal that can easily be customized and scaled up to feed a crowd. They are fun to make and cook right on the campfire for easy cleanup!

Ingredients
  

  • 1 onion small red
  • 1 bell pepper medium red
  • 24 mushrooms medium
  • 4 steaks (1-inch-thick) boneless grilling (such as New York strip, ribeye, or sirloin; about 1 ½ lb)
  • ½ cup barbecue sauce hickory (or regular)
  • ¼ cup cola
  • ¼ cup chili sauce sweet
  • 1 cup beer of your choice

  • Get your outdoor fire pit ready by adding a grill. Mince the pepper and onion into one-inch chunks. Begin by chopping the meat into 1-inch cubes and then add salt. Skewer the steak, peppers, and onions in alternating patterns (wash hands).

  • Blend together the sweet chili sauce, cola, beer, and barbecue sauce. Marinade in this mixturea minimum of 24 hours.

  • Cut the onion, bell pepper, mushrooms and meat into 1 nich cubes. Add the cubes to 6 inche meat skewers (either meatl or wood) alternating the ingredients.
  • Roast over an open fire until the meat complety cooked through (see notes) and the veggies have a little char on them

  • Remove from the skewers and serve with bowls of mariade for dipping

Notes

Note: The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
